Mocha Pudding Delight Recipe with International Delight #LightIcedCoffee

I love my coffee. It’s a must-have for me in the morning as I wake up to my busy day. And, like many coffee lovers, I also enjoy treats like iced coffee. But with coffee shop prices often ranging from $3-4 or more per cup, it’s rarely in my budget to indulge. And those drinks are usually high-calorie too.

Lucky for me (and you!) there’s International Delight Light Iced Coffee.

International Delight Iced Coffee

International Delight Light Iced Coffee has just 100 calories per serving, which is 1/3 less calories than the regular version. And at just $3.98 for a whole quart, that’s a lot of iced coffee for the money.

I love it. I enjoyed the regular International Delight Iced Coffee on occasion last summer, but I didn’t drink it very often because of the calories. Now, the light version makes it easy to enjoy a delightful treat without overdoing it on the calories or spending too much money. That’s a winner in my book.

Creating a Recipe with International Delight #LightIcedCoffee

When I was asked to create a recipe using International Delight Light Iced Coffee, naturally I thought about making an iced coffee drink. But then I started thinking. And it came to me.

A mocha pudding. 

A quick and easy mocha pudding recipe.

Now that’s not something you can find anytime, anywhere at the store. And certainly not when you’re trying to stick to a budget.

My idea was simple – take instant vanilla pudding and replace some of the milk with International Delight Light Iced Coffee in Mocha. So easy, anyone can make it.

Shopping for the Ingredients

First, I had to buy the iced coffee. International Delight Light Iced Coffee is sold at Walmart stores so I made a trip to a nearby Super Walmart and picked it up, along with the other ingredients I would need, including instant vanilla pudding, chocolate sandwich cookies (aka generic oreos) and frozen whipped topping.

Mocha Pudding Delight recipe

This pudding recipe has a light delightful mocha flavor, thanks to International Delight Light Iced Coffee and the oreos and frozen whipped topping add the perfect final touches. It has been a huge hit in my household. The adults enjoy the coffee flavor but it’s not so strong that the kids don’t like it either. And the fact that it literally takes just minutes to make? Let’s just say that I’ve made it three times so far and it never lasts for long around here!

MochaPudding Delight


Here, my friends, is my delicious Mocha Pudding Delight recipe:

What You’ll Need:

Makes 2-4 servings

  • 1 box instant vanilla pudding
  • 1 cup International Delight Light Iced Coffee in Mocha
  • 1/2 cup milk
  • 4-6 Oreo cookies
  • whipped topping

*Note: Use low-fat or sugar-free varieties to make this treat even lower calorie.

International Delight mocha pudding ingredients

Start by breaking up 5 of the Oreo cookies in a zippered bag. Just pound them with your hand – it doesn’t have to be tiny bits. You just want them broken up. Save 1 whole Oreo.

Add the iced coffee, milk, and pudding mix into a bowl.

Beat for about 2 minutes until it starts to set.

Refrigerator for 5-10 minutes to allow the pudding to set.

Spoon half the pudding into 2-4 small bowls or mugs. Sprinkle the crushed oreos over.

Cover with the remaining pudding. Top with a dollop of whipped topping and garnish with 1/2 an Oreo.

Enjoy!

Store in the refrigerator until served. This is best enjoyed the day you make it.

    i just discovered this iced coffee drink about a month ago. it is very, very yummy. i also cant afford the high prices at the coffee shop so this is a great alternative. knowing i paid less for it than a big one at the shop and to get way more servings out of it makes it taste even better. this pudding is a great idea, too. you cant go wrong when you add oreos to anything.

  32. I like that you added the crushed oreos! I’m not a big fan of pudding but I think I would actually really like pudding that’s flavored with the light iced coffee.
