I love bars. I love cookies too, but sometimes I don’t have the time, going back and forth with all the cookie sheets in and out of the oven. That’s when bars are great. But not all bars are as good as cookies. A lot of bar recipes taste like they are trying to be cookies, but they don’t quite make the mark.
Now this bar recipe? It can stand on its own two sticky ooey gooey feet. Okay, never mind that I just said that. I think you get the point.
I modified it from a recipe I found in one of my cookbooks and ooh is it yummy.
One great thing about this recipe is that you can change it! Do you have nuts in the house? Throw those in. Maybe you don’t have white chocolate chips but you do have dark chocolate? Try it out!

Ooey Gooey Chunky Bars
(scroll down for the full printable recipe)
What You’ll Need:
- 1/2 cup butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar, packed
- 2 eggs
- 2 teaspoons vanilla extract
- 1.5 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup white chocolate chips*
- 1 cup semi-sweet chocolate chips*
- 1-1.5 cups toffee bits*
*Note: you can change these last 3 ingredients around to whatever you have in the cupboard. The toffee bits give these bars their “ooey-gooey-ness” but if you don’t have them try something else.

Start by preheating your oven to 350°
In a large mixing bowl, mix 1 stick of softened butter (if you forgot to pull out your butter ahead of time, soften it quickly with this super fast butter softening tip) until it’s nice and fluffy.

Add 3/4 cup of sugar and 3/4 cup brown sugar (packed).

The original recipe said to mix it until it was “light and fluffy.” Mine wouldn’t fluff up no matter what I did. So don’t worry about that. Just mix it.
See? Does that look fluffy to you?

Now add 2 eggs and 2 teaspoons of vanilla extract. Mix them together well.
(Now that looks a little more fluffy)

In a separate bowl, combine 1.5 cups of flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Add slowly to the creamed mixture. You could dump it in all at once, but you’ll wind up in a cloud of flour. But that’s up to you…

Mix it up good. It will be thick.

Now pour in 1 cup of white chocolate chips, 1 cup of semi-sweet chocolate chips, and 1/2-3/4 cup of toffee bits.

Doesn’t that look yummy? Mix it all up with a spoon.
Spread the dough into a greased 9x13x2″ pan. It’s kinda sticky, so I used the back of a spoon dipped in flour to spread it out.

Lastly sprinkle some more toffee bits over the top (about 1/2-3/4 cup)

Bake at 350º until the top begins to crack and is golden brown. Cool on a wire rack and then cut into bars.
Then bite into that ooey gooey chunky goodness!

Ingredients
- 1/2 cup butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar, packed
- 2 eggs
- 2 teaspoons vanilla extract
- 1.5 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup white chocolate chips*
- 1 cup semi-sweet chocolate chips*
- 1-1.5 cups toffee bits*
- *You can change the last 3 ingredients to whatever you have in the cupboard. Chocolate, candy, nuts, etc.
Instructions
Cream the butter and sugars in a large mixing bowl. Add eggs & vanilla; mix in well. Combine the flour, baking powder, and salt. Add to the creamed mixture and mix well. Stir in the chocolate chips (both types) and 1/2-3/4 cup toffee bits.
Spoon into a greased 9x13x2" pan and spread evenly. Sprinkle with the remaining toffee bits. Bake at 350 degrees for 25-30 minutes or until the top begins to crack and is golden brown.
Cool on a wire rack. Cut into bars.

These look so good! I just saw your recipe on Pinterest. Since I don’t like toffee bits, I’ll be substituting some pecans and shredded coconut. Can’t wait to try these! Thanks for sharing with us.

MMmmm…the toffee bits will be a hit for my family. They looooove regular chocolate/butterscotch cookie bars! not even going to tell them what’s in there and see if they notice! Toffee is my favorite flavor of all!

This recipe sounds really great! Will have to give it a try. Will need to make it gluten free, but that is very easily fixed! Thanks for sharing!
These look delicious – I have all the ingredients except for the chocolate chips so I will be able to make it later this week after my trip to the store. Thanks, my kids are going to love them.
